Grilled Vegetable Salad

You will need:

Fresh Vegetables (we used sweet corn, asparagus, carrots, summer squash, zucchini, red onion, red bell pepper)

Cherry Tomatoes

Blue Cheese

1 tsp lemon juice

1 tsp dijon mustard

1/4 cup olive oil


Wash and cut your vegetables. Whisk together lemon juice, dijon mustard and olive oil to make your dressing. Add dressing to your vegetables. Place vegetables in a grilling pan. Place the grilling pan on the grill and cook for approximately 20 minutes. Remove pan from grill and transfer into a bowl. Add cherry tomatoes and mix together. Serve in a bowl and add the blue cheese or cheese of your choice prior to serving (cheese is optional).
