You will need: 1 lb ground beef 1 1/4 tsp salt divided 2 cloves minced garlic 1/2 tsp red pepper flakes 6 ounces fresh baby spinach 1 cup ricotta cheese or cottage cheese 1/2 cup grated parmesan 4 large bell peppers (any color) 1 Tbsp tomato paste 1/3 cup water 1/4 tsp garlic powder 1 cup shredded mozzarella Preheat oven to 400 degrees. Cook the ground beef in a large skillet over medium heat and crumble as it cooks. Drain grease. Add garlic, red pepper flakes, 3/4 tsp of salt and pepper to the skillet and cook for 1 more minute. Add the baby spinach and cook until wilted (about 5 minutes). Add ricotta or cottage cheese and parmesan. Cut the bell peppers in half in a 9x13 baking dish and fill each with the cooked mixture. Stir together tomato paste, water, garlic powder and 1/2 tsp of saltine a small bowl. Spread over the top of peppers and then top with mozzarella cheese. Bake for 30 minutes. Remove from oven and enjoy!
