Roasted Sausage and Veggies

Ingredients

  • 12–16 oz smoked turkey or chicken sausage, sliced (about 3 cups)
  • 2 cups sweet potato, diced (1 large)
  • 2 cups broccoli florets
  • 1 cup bell pepper, chopped (any color)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning (or favorite spice blend)
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F.
  2. Add the sausage, vegetables, and minced garlic to a large baking sheet. Drizzle with olive oil and add spice mix, salt, and pepper. Toss until everything is well coated.
  3. Bake for 20 minutes, flipping halfway through.
  4. Enjoy!

*Optional: Add other vegetables such as onion, cauliflower, or zucchini if preferred.
