Main Dish: Chicken Zucchini Burger
Burgers are a great way to hide some blended veggies for those picky eaters in your family! Try this chicken burger on a lettuce wrap or on a salad for a great low-carbohydrate meal and check out our grilled peaches side dish for some added color and taste to this healthy recipe!
INGREDIENTS
- 3 cups zucchini (grated with skin on, about 2 small)
- 1 1/2 lbs. ground chicken
- 1/3 yellow onion, finely minced
- 1 large jalapeno, seeded and finely minced (can leave out if prefer less spice)
- 3 TBSP grated Parmesan cheese
- 2 garlic cloves, minced
- 1 1/2 tsp paprika
- Salt and pepper
DIRECTIONS
1. Mix zucchini, chicken, onion, jalapeno, garlic and spices together until combined.
2. Divide mixture into 8 equal portions. Form each portion into a patty.
3. If using a grill, place on grill top until cooked through. Add Parmesan cheese near the end to melt.
If using the oven, preheat to 425 degrees. Place the patties on a baking sheet sprayed with non-stick spray. Bake for about 18-20 minutes until center is cooked through (firm). Remove patties from oven, place the oven rack to top position and then set oven to broil. Sprinkle each patty with Parmesan cheese and place in the oven. Broil until tops are light brown and crispy

Side Dish: Grilled Peaches
INGREDIENTS
- Peaches (1/2 = serving)
- Olive oil
DIRECTIONS
- Wash and cut the peaches in half brushing the inside of the peaches with a small amount of olive oil.
- Place them on the grill with the inside down. Let sit with grill open for 1-3 minutes. Turn peaches over with tongs and grill for one more minute. Remove and enjoy!
