Ground Meat Stew

1 tsp olive oil

1/2 tsp chopped garlic

2 cups assorted, chopped veggies (onion, asparagus, broccoli, zucchini, spinach, mushrooms)

4 oz ground meat (turkey/pork/beef)

1 baked sweet potato



. Heat oil in a medium sized saucepan over medium heat. Reduce heat to low and add garlic, cook for 2-3 minutes.

. Add vegetables and cook until veggies begin to soften

. Add meat and cook until done (leave meat in chunks)

. Serve with sweet potato
