Ground Meat Stew

Ingredients:

  • 1 tsp olive oil
  • 1/2 tsp chopped garlic
  • 2 cups assorted, chopped veggies (onion, asparagus, broccoli, zucchini, spinach, mushrooms)
  • 4 oz ground meat (turkey/pork/beef)
  • 1 baked sweet potato

Directions:

  1. Heat oil in a medium-sized saucepan over medium heat. Reduce heat to low and add garlic; cook for 2–3 minutes.
  2. Add vegetables and cook until they begin to soften.
  3. Add meat and cook until done (leave meat in chunks).
  4. Serve with sweet potato.
