Healthy Deviled Eggs

Ingredients:

  • 6 hardboiled eggs, peeled and cut lengthwise
  • 1/4 cup plain Greek yogurt
  • 2 tsp dijon mustard
  • 1/4 tsp pepper
  • 1/8 tsp salt
  • paprika, for garnish

Directions:

  1. Place eggs in a pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat.
  2. Once boiling, turn off heat, cover, and let sit for 12 minutes.
  3. Cool eggs under cold water or in an ice bath, then peel and slice lengthwise.
  4. Separate yolks into a bowl and place whites on a plate.
  5. Add yogurt, mustard, pepper, and salt to the yolks and mash until smooth (use a blender if desired).
  6. Spoon or pipe mixture back into egg whites, sprinkle with paprika, and serve.
